Cream of Broccoli Soup


3tbsp butter, 1 small onion chopped, 1 celery stalk chopped, 2tbsp flour, 6cups steamed broccoli florets, 2 cups chicken broth, 1-2 cups milk or 1 cup heavy cream, salt and pepper to taste.

Melt butter in a medium stock pot.  Sautee onion and celery in melted butter.  Stir in flour and let it cook. Pour in chicken broth and add the broccoli.  Let it simmer for 10minutes.  Pour the soup in a blender (in batches) or use a hand blender to puree the soup until smooth.  Add milk or heavy cream and stir.  Let it simmer but don't boil.  Season with salt and pepper to taste.
